桑葚中产花青素内生真菌的筛选及其抗氧化活性的研究

摘要:桑葚作为一种药食同源水果,其花青素广泛运用于食品及保健品中,是具有良好开发前景的天然资源。为进一步促进桑葚花青素的利用,本文从内生真菌出发,筛选桑葚中产花青素的内生真菌,并对其发酵液中总黄酮含量及抗氧化能力进行研究。结果表明,在桑葚切片处共筛选得到7株内生真菌,EF1EF7,在测定其发酵液中花青素含量后,确定EF3号菌株为产花青素的内生真菌,EF3菌株发酵液中花青素含量为1.439 mg/mL,总黄酮含量为12.79 mg/mL。发酵液质量浓度在1 mg/mL 条件下,超氧阴离子自由基清除率为94.72%DPPH 自由基清除率为72.10%,总抗氧化能力为0.750 1 μmol/mL。综上,桑葚内生真菌EF3具有产花青素的能力,且发酵液表现出良好的抗氧化活性,本研究结果为桑葚花青素研究及开发利用提供了数据支撑。

Isolation and Identification of Anthocyanidin-producing Endophytic Fungus from Fructus mori and Study on Its Antioxidant Activity

AbstractAs a kind of medicine and food homologous fruit, anthocyanins of mulberry are widely used in food and health care products, and it is a natural resource with good development prospects. In order to further promote the utilization of anthocyanins in mulberries, this paper starts from endophytic fungi, screened endophytic fungi that produce anthocyanins in mulberries, and studied the total flavonoids content and antioxidant capacity in their fermentation broth. The results showed that a total of 7 endophytic fungi, EF1-EF7, were screened at the mulberry slices. After measuring the anthocyanin content in the fermentation broth, the strain EF3 was determined to be an anthocyanin- producing endophytic fungus. The anthocyanin content in fermentation broth of EF3 strain was 1.439 mg/mL, The total flavonoid content was 12.79 mg/mL, and the mass concentration of the fermentation broth was 1 mg/mL, the superoxide anion free radical scavenging rate was 94.72%, the DPPH free radical scavenging rate was 72.10%, and the total antioxidant capacity was is 0.750 1 μmol/mL. In conclusion, the endophytic fungus EF3 from mulberry has the ability to produce anthocyanins, and the fermentation broth shows good antioxidant activity. The results of this study provide data support for the research, development and utilization of mulberry anthocyanins.
