摘要:在食品微生物检验内部质量控制中,对质控样品检验、人员之间比对、人工染菌(加标法)、MPN计数法获得的实验数据结果进行评价,通过分析和利用质量控制活动所输出的数据,控制和改进实验室活动,确保微生物检测结果的有效性。以样品中的菌落总数、大肠菌群、霉菌和酵母、铜绿假单胞菌、产气荚膜梭菌、嗜渗酵母、蜡样芽孢杆菌、金黄色葡萄球菌项目为例,通过空白对照实验、暴露实验、质控样、人员比对、加标回收的方式以验证内部质量监控是否达到预期效果。结果表明,空白对照实验和暴露实验结果有效;人员比对的最大绝对差值为0.37 log10 CFU/g;不同菌种的加标回收率在0.81~1.13之间;MPN计数法实验组结果在对照组结果的95%置信区间内。定量测试法用于微生物检测结果内部质量监控是可行的。

Application of Quantitative Testing in Internal Quality Control of Food Microbiological Testing

Abstract:In the internal quality control of food microbiological inspection, to evaluate the experimental data results obtained by quality control sample inspection, comparison between personnel, artificial bacterial staining (standard adding method) and MPN counting method, control and improve laboratory activities by analyzing and using the data output from quality control activities, and ensure the effectiveness of microbiological test results. Taking the total colony count, coliform bacteria, mold and yeast, Pseudomonas aeruginosa, Clostridium perfringens, osmophilic yeast, Bacillus cereus, Staphylococcus aureus in the sample as examples, blank test, exposure test, quality control sample, personnel comparison, and standard recovery were used to verify whether the internal quality control has achieved the expected effect. The results of blank test and exposure test were valid. The maximum absolute difference of personnel comparison was 0.37 log10 CFU/g. The recoveries of different strains ranged from 0.81 to 1.13. The results of the MPN counting group were within 95% confidence intervals of the control group. Quantitative test method is feasible for internal quality control of microbiological test results.
