摘要:随着工程教育专业认证的深入推进,对高等教育中食品质量与安全专业的教学质量提出了更高的要求。“食品安全学”作为该专业的核心课程,对于培养高素质专业人才具有举足轻重的作用。该文通过系统分析“食品安全学”课程当前面临的挑战和问题,从教学大纲、教学理念、教学内容、教学方法、考核方式等多个维度出发,探讨了一系列创新性的改革策略,以期提高课程教学质量。通过借助课程思政开展教学改革,学生的职业认同感明显增强,学习的主动性和创新能力有所提高,更好地满足了工程教育专业认证标准的要求,最大化实现食品质量与安全专业人才培养的质量提升。

Exploration and Practice of the“Food Safety”Course Teaching in the Food Quality and Safety Major Under the Background of Engineering Education Accreditation

Abstract: With the deepening of the professional certification of engineering education,higher requirements have been put forward for the teaching quality of food quality and safety major in higher education. As the core course of this major,“Food Safety”plays a pivotal role in cultivating high-quality professionals. In this paper, by systematically analyzing the current challenges and problems of the “Food Safety” course, a series of innovative reform strategies from multiple dimensions such as syllabus, teaching philosophy, teaching content, teaching methods,assessment methods are discussed in order to improve the teaching quality of the course. The teaching reform is carried out with the help of course ideology and politics, students’ sense of professional identity has been significantly enhanced,and their learning initiative and innovation ability have been improved, so as to better meet the requirements of engineering education professional accreditation standard and maximize the quality improvement of food quality and safety major professional cultivation.
