摘要：基因敲除是研究基因功能和实现基因精确缺失的最直接和有效的方法，是引领分子生物学时代革新的重大技术。白酒酿造过程中的群落微生物对酒体及风味有着至关重要的影响，研究表明基因敲除技术对于白酒酿造中微生物功能的强化和白酒品质的提升具有积极作用。本文综述了基因敲除技术，包括不同基因敲除技术方法的作用机制、优缺点和适用范围及其在白酒酿造过程中酿酒酵母基因敲除中的应用，为今后基因敲除技术在酿酒微生物中的应用提供参考。

Research Progress of Gene Knockout Technology and Its

Application in Baijiu Brewing

Abstract: Gene knockout is the most direct and effective method to study gene function and achieve precise gene deletion. It is an important technology leading the innovation of molecular biology era. Community microorganisms in the process of Baijiu brewing have a vital influence on Baijiu body and flavor. The research shows that gene knockout technology has a positive effect on strengthening the microbial function in Baijiu brewing and improving the quality of Baijiu. In this paper,gene knockout techniques were reviewed, including the mechanism,advantages and disadvantages of different gene knockout techniques and their application in Saccharomyces cerevisiae gene knockout in Baijiu brewing, providing reference for future application of gene knockout techniques in brewing microorganisms.
