摘要:水果是我国重要的农产品,其在生长、采收、储存和转运过程中易受到霉菌污染,从而产生并积累真菌毒素,进一步危害消费者的生命安全。本文综述了水果及其制品中常见的真菌毒素种类、相关检测技术以及风险评估的研究现状,以期为相关限量标准的制定奠定基础,并为居民膳食安全提供支撑。

Research Progress of Detection Technology and Risk Assessment of Mycotoxins in Fruit and Its Product

Abstract: Fruit is an important agricultural product in China, which is susceptibly contaminated by mould during the process of growth, harvest, storage and transport, resulting in the production and accumulation of mycotoxins that further endanger the safety of consumers. The status of research on mycotoxin species, detection methods and risk assessment in fruits and fruit products were summarized in this article with a view to provide theoretical reference for the development of relevant limit standards and dietary safety of local residents.
