摘要:本文通过建立模糊聚类模型,利用清香型小曲酒的27种微量成分,经过模型运算可以将9种小曲酒聚合成不同的分类,实现了分类的可量化。在结合清香型小曲酒的工艺、产地、原料等基础上,判定得出模糊聚类结果科学合理,能够客观反映清香型小曲酒风格的异同,为制定小曲酒可量化的质量分类标准奠定基础。

Abstract:In this paper, through the establishment of Fuzzy clustering model, 9 kinds of Xiaoqu Baijiu can be clustered into different classifications by using 27 kinds of trace components of Xiaoqu Baijiu, which can be quantified. On the basis of combining the technology, place of origin and raw materials of light flavor Xiaoqu Baijiu, the results of Fuzzy clustering are scientific and reasonable, which can objectively reflect the similarities
and differences of the style of light flavor Xiaoqu Baijiu. It lays a foundation for establishing quantifiable quality classification standard of Xiaoqu Baijiu.
