苏州市工业园区餐饮单位餐具消毒情况快速检测结果评估

摘要:了解苏州市工业园区建立和未建立食品安全工作站的餐饮单位餐具洁净度,分析建立食品安全工作站对餐饮监管的作用。选取建立(实验组)和未建立(对照组)食品安全工作站的商场共60家餐饮单位,连续4周对其餐具进行抽样,检测餐具表面腺嘌呤核苷三磷酸(ATP)含量,分析实验组和对照组餐饮单位餐具ATP含量是否有差异。结果表明,秩和检验结果显示实验组餐具表面ATP含量显著低于对照组(P0.05)。两组均显示大型餐具ATP含量低于小型餐具。本研究通过建立食品安全工作站提高了苏州市工业园区餐饮单位餐具洁净度,对餐饮监管有一定积极作用。

Evaluation of the Cleanliness of Tablewares in Restaurants by Rapid Detection in Suzhou Industrial Park

AbstractTo understand the cleanliness of tablewares in restaurants with and without food safety workstations in Suzhou Industrial Park, and to investigate effects of the establishment of food safety workstations on catering supervision. 60 restaurants in 2 business districts were selected, and their tablewares were collected to measure the concentrations of adenine nucleoside triphosphate (ATP). Rank sum tests were used to analyze whether there is a difference in the ATP concentrations of the tablewares of the restaurants that have established (experimental group) and non- established (control group) food safety workstations. Rank sum test showed that ATP concentrations of tablewares in the experimental group was significantly lower than that in the control group (P<0.05). Both groups showed that the ATP content of large-scale tablewares was lower than that of small-sized tablewares. The establishment of food safety workstation has improved the cleanliness of tablewares in restaurants in Suzhou Industrial Park, and has a certain positive effect on catering supervision.
