Ca2+、瓜尔豆胶及酚类物质对海藻酸钠基涂膜溶液性质的影响

摘要:涂膜组分对涂膜溶液的特性及稳定性有重要的影响。本文研究了添加Ca2、瓜尔豆胶和迷迭香精油对海藻酸钠溶液理化性质的影响,对体系的平均粒径、ζ-电位、低场核磁共振弛豫特性、抗氧化性、流变特性等性质进行了比较,并借助DSC和低温显微镜对溶液的热物性进行了研究。结果表明,添加瓜尔豆胶可以增大海藻酸钠溶液的平均粒径、粘度及抗冻性能,而迷迭香精油的添加有助于溶液抗氧化性的增强。但Ca2对溶液性质影响较小。该研究结果为复合海藻酸钠基可食性涂膜溶液的设计及应用提供了一定的基础信息。

Effects of Ca2, Guar Gum and Phenols on the Properties of Sodium Alginate-based Coating Solution

AbstractThe coating composition has an important influence on the properties and stability of the coating solution. This article studied the effects of adding Ca2 +, guar gum and rosemary oil on the physical and chemical properties of sodium alginate solution. The average particle size, ζ- potential, low-field nuclear magnetic resonance relaxation properties, oxidation resistance, rheological properties of the system were compared, and the thermophysical properties of different solutions were studied with the help of DSC and cryogenic microscope. The results showed that the addition of guar gum could increase the average particle size, viscosity and antifreeze performance of the sodium alginate solution, while the addition of rosemary oil helped to enhance the oxidation resistance of the solution. But Ca2+ had little effect on the properties of the solution. The results provided certain basic information for the design and application of the composite sodium alginate colloid system.
